Sacred Season Episode 5: Fat Tuesday

Erin’s Healthyish Pancake Recipe: (adapted from Alison Roman’s Perfect Buttermilk Pancakes)

  • 1.5 cups whole wheat flour
  • 2 cups white flour
  • ½ cup unflavored protein powder
  • ¼ cup honey
  • 3 teaspoons baking powder
  • 3 teaspoons baking soda
  • 2 ½ teaspoons kosher salt
  • 5 cups buttermilk
  • 3 large eggs
  • 6 tablespoons melted butter

Whisk dry ingredients together in a large bowl. Pour buttermilk, eggs, and melted butter into a well in the center of the dry ingredients. Mix together starting in the center with a whisk (small lumps are ok). Cook all of the pancakes. Cool and freeze left-overs flat in a ziploc bag. Pop into the toaster and serve with butter and syrup!
