Here’s Lori’s recipe:
Regeneration: The Plough Rickey
The Plough Rickey is derived from a traditional gin drink, but it can be made with vodka or as a mocktail: a refreshing summer drink any way you mix it.
2 oz Hendricks
1/4 medium lime
2 cucumber slices
10 mint leaves
2 sugar cubes
Sparkling water or club soda
Muddle together the mint, sugar, lime, and 1 cucumber slice in a highball glass
Pour in gin or vodka
Pour into a cocktail shaker
Add ice; shake; strain back into the glass
Add several cubes of ice; stir
Top with sparkling water
Garnish with the remaining cucumber slice & a spring of mint
To make it virgin, just skip the gin/vodka and add a couple of ounces of sparkling water to the muddled ingredients before you pour it into the cocktail shaker.
